Happy Saturday!! Today's my day to share at the KLSNS Blog and we sure have a recipe theme going on over there this week! No wonder with Christmas so close *Ü* My sister Kathy gave me this recipe recently for Almond Roca, so I made up a batch yesterday and trust me, if you do it right it tastes exactly like the expensive stuff in the store!! The trick is to make sure you use a candy thermometer and bring it to the right temperature or else it could be a big flop! I almost had to learn the hard way, but decided once I melted my butter that I needed to run to the store and buy myself a candy thermometer! ;)
Anyway, so I made a cute little bag topper using this 60's Tilda (from the Little Yummy for Your Tummy collection) and this Christmas Eskimo Kisses paper by Basic Grey. I cut it out with the Top Note die. This will make a nice gift to have on hand for those unplanned people I forgot to get a gift for (don't we all have those every year?) *Ü* Would you all like the recipe for this tasty treat?? 1 cup butter
1 cup sugar
3 Tbsp. water
1 Tbsp. light corn syrup
1/2 cup almonds, coarsely chopped
3/4 cup chocolate chips
1/2 cup almonds, finely chopped (I didn't use all of 1/2 cup)
Melt butter. Add sugar, water, and syrup. Cook over med. heat to 290 degrees on candy thermometer, stirring frequently. (Very important to have a candy thermometer) Remove from heat and add coarse almonds. Pour into a buttered 13x9" pan. Let sit 2-3 minutes. Sprinkle choc. chips over top and let stand 1-2 min. more. When chocolate chips are soft, use a spatula and spread the choc. over the toffee mixture and sprinkle wiht finely chopped almonds. When chocolate is firm, break into pieces. Enjoy!!
